The protege crew of local barbecue guru Wiley McCrary didn’t bring home the gold at the 13th annual Georgia State Championship Barbecue Cook-off on Saturday.
But the awards the team earned at the competition in Dillard, Ga. were a healthy start to the growth of a smoking-hot dream team, said their leader, Janet McCrary.
The team, which represented Wiley’s Championship BBQ restaurant on Whitemarsh Island, placed in the top 10 out of 60 competing teams in three categories, McCrary said.
“I’m really proud of them,” he said. “The big part is that we were totally collaborative.”

We’re being blogged!

This is a place that you don’t want to bring your mother to. Only because you will be arrested for abuse, because this is “smack your momma” cuisine. This is life changing cuisine. You’re going to walk away asking yourself “why have I eaten anywhere else?” “Why didn’t my mother feed me this?” “Did my mother not love me?”
My first reveal is Wiley’s BBQ. Mr. Wiley is no secret to the BBQ world. He has won so many awards for his food it is down right embarrassing. This little gem is located in a strip center, so don’t miss it. So many treats so little time. I recommend Roman style eating here…that is gorge and purge. I know that is pretty gross, but take a few a bites and you will understand. This is serious throwdown, so don’t even play. Brisket, Mac & Cheese, pulled pork, homemade sauces, banana pudding**** (my personal favorite, made me miss my grandmaw), bourbon breadpudding, sweet tea and sooooo much more.

Wiley’s: Beef Brisket
Wiley McCrary spent six years honing his brisket skills, balancing the multifaceted textures and flavors for an unbeatable outcome. His brisket is ranked one of the top in the nation, and it is no wonder why.
“The trouble with brisket is that some people treat it like a roast beef,” explains McCrary. “And it certainly is not. It is a delicacy unto itself when cooked correctly.” Read full article…

A pitmaster and his 'cue
“This is not a health food store,” quips Wiley McCrary, a cigar in his hand, gravel in his voice, and a twinkle in his eye, “We’re the home of naughty food.”
He’s lounging in the sun in front of Wiley’s Championship BBQ, the restaurant he and his wife Janet opened last fall on Whitemarsh Island.
The cozy little spot has the atmosphere of a neighborhood pub whose air is tinged with the reassuring aroma of wood smoke. McCrary and his wife, Janet, moved to Savannah from Atlanta to slow down and open a barbecue catering business. Read Full Article…
