This past September our family vacationed in Savannah and absolutely enjoyed our experience at Wiley’s Championship BBQ. Our son Ethan Henry particularly liked the smoked corn on the cob. The protege crew of local barbecue guru Wiley McCrary didn’t bring home the gold at the 13th annual Georgia State Championship Barbecue Cook-off on Saturday.
But the awards the team earned at the competition in Dillard, Ga. were a healthy start to the growth of a smoking-hot dream team, said their leader, Janet McCrary.
The team, which represented Wiley’s Championship BBQ restaurant on Whitemarsh Island, placed in the top 10 out of 60 competing teams in three categories, McCrary said.
“I’m really proud of them,” he said. “The big part is that we were totally collaborative.”

Barbecue runs through Wiley McCrary’s blood, but after 13 years on the competitive barbecue circuit, competition no longer does.
The 13th annual Georgia State Championship Barbecue Cookoff – this weekend in Dillard, Ga. – will be without McCrary, the owner of Wiley’s Championship BBQ and former Georgia champion, for the first time since 1997.
“I’ve done it for years,” McCrary said. “It’s old hat to me.”
But the McCrary tradition is not about to end.
McCrary has dedicated this season to training a team to defend his legendary career.
Wiley announces his first class that will be taught at our restaurantp Wiley’s Championship BBQ. The class runs for two nights August 10 and 11, 2009 (Monday and Tuesday) from 6 until 8:30 pm. Class is limited to 20 participants and the cost is $75. Wiley will review the preparation of the 4 main meats used in most professional BBQ competitions:: pork butt, pork ribs, chicken and beef brisket. Students will have an opportunity for some ‘hands on’ experience.
